🍀 One-Pan Lemon Garlic Shrimp Pasta with Veggies

πŸ§‚ Updated Ingredients (Serves 2–3):

β€’ 8 oz whole wheat pasta (spaghetti or linguine)

β€’ 2 tbsp olive oil, divided

β€’ 3 cloves garlic, thinly sliced or minced

β€’ 1 zucchini, chopped

β€’ 1 cup broccoli florets

β€’ 1 cup cherry tomatoes, halved

β€’ 2 large handfuls baby spinach

β€’ Zest + juice of 1 lemon

β€’ Β½ lb (about 225g) shrimp, peeled & deveined

β€’ Salt + pepper to taste

β€’ Optional: red pepper flakes, fresh herbs, nutritional yeast or parm

🍳 Instructions:

1. Sear the shrimp first:

Heat 1 tbsp olive oil in your pan over medium-high.

Add shrimp, season with salt, pepper, and a pinch of chili flakes.

Sear 1–2 min per side until pink and just cooked.

Remove from pan and set aside.

2. In the same pan, add remaining olive oil, garlic, zucchini, broccoli, cherry tomatoes, and pasta.

Add 3 Β½ cups water and a generous pinch of salt.

3. Bring to a boil and let it simmer, stirring occasionally. Cook until pasta is done and most of the water is absorbedβ€”about 8–10 minutes.

4. Add the spinach and stir until wilted.

5. Kill the heat. Add back the shrimp, then stir in lemon zest and juice. Adjust seasoning.

6. Finish with a touch more olive oil and optional herbs or some parmesan cheese.
